Las Gaviotas coffee collective embraces 7 unique and collectively owned farm plots including 3 processing stations with modern technology in sorting, processing, drying and hulling. Each station has a predetermined approach to processing and each farm plot selected based on its most outstanding characteristics for coffee cultivation. Fortuna Sudan Rume is a combination of ideas where terroir meets sustainable approaches to processing to create a unique blend of remarkable flavors and a reduction in the carbon footprint related to processing. The lot was picked in February during the main harvest with cherry fermentation starting immediately while being transported to the processing station in Santander. At the station the fermentation and oxidation was interrupted by placing the greens in a cellar room (dark room) with a temperature range of 15-17 C for 72 hours while being sprayed with a concentrated enriched microbiome slurry – intensifying the authentic organoleptic flavor notes of citrus, herbs and spices common to Sudan Rume genetics. The cherry was pulped with an eco mill and dried in dehydrating camaras using solar energy for 7 days. developing sweet and rich fruit forward flavors and stable a shelf life.
